Rhubarb

Ingredients: |
1½ cups
stewed Washington Rhubarb
1½ cups
moist bread crumbs
¾ cup sugar
1½
teaspoons cinnamon
1½
tablespoons butter
2 tablespoons grated orange
rind
⅓ cup water

Directions: |
Place half of rhubarb
in buttered casserole. Combine bread crumbs, sugar and
cinnamon, sprinkle one-half over rhubarb and dot with half the
butter. Repeat with remaining rhubarb, crumbs and butter.
Sprinkle with orange rind, add water and cover. Bake 375° for
35-40 minutes. Serve with hard sauce or foamy sauce.
Yields: 6 portions.
