Rhubarb Conserve
Ingredients:
  • 1 lb. Washington Rhubarb

  • 2 cups sugar

  • ½ cup seedless raisins

  • 1 lemon

  • ½ orange

  • Directions:

    Wash stalks of rhubarb and slice.  Sprinkle with sugar, add raisins, grated rind and juice of orange or lemon.  Mix and let stand one-half hour to draw the juice.  Bring slowly to boiling point, let simmer until thick, about one-half hour.  Cool and seal.

    We harvest Washington rhubarb from hothouses January through March and then hand cut from fields April through September.  The colorful plant is grown in our valley, in the shadow of Mt. Rainier.
