Rhubarb

Ingredients: |
1 lb. (4 cups) Washington Rhubarb
1 cup sugar
1 teaspoon
grated rind of lemon
1 package
white cake mix

Directions: |
Mix cake as directed
on package. Pour batter into greased baking pan, 7½
x 12. Top with diced unpeeled rhubarb and grated rind.
Sprinkle sugar over top. Bake at 350°F for 40-45 minutes.
While it bakes, the rhubarb goes to the bottom, forming a sauce, and
the cake rises to the top. Sprinkle top of cake with powdered
sugar. Serve warm with cream.
