RHUBARB TORTE BARS
CRUST
1 c. butter or oleo
2 c. flour
10 tbsp. powdered sugar
TOPPING
4 c. heaping cut up rhubarb
6 eggs
3 c. sugar
½
c. flour
Preheat oven to 350 degrees. Mix
crust ingredients like a pie crust. Pat down in a 9
x 13 pan. Bake for 15 minutes and set aside.
Prepare rhubarb, put in bowl and pour boiling water
over. Add a little salt, let stand a few minutes,
then drain. In large bowl mix eggs, sugar and
flour. Beat by hand. Add rhubarb. Pour mixture
over baked crust, bake at 350 degrees for 45
minutes.
