Rhubarb Custard Pie

MORE ABOUT…

Rhubarb Nutrition
Two-thirds a cup of cut rhubarb contains 21 calories, 24% RDA of calcium and 9% RDA of Vitamin C.

Peel or Not to Peel?
Don’t peel!  The coloring and many vitamins are stored in rhubarb’s skin.

Pie Crust/Pastry
All of the pie recipes here do not give the recipe for the crust, or pastry.  Either purchase pre-made crusts or check your favorite cookbook, such as the Fannie Farmer Cookbook for recipe.

To Keep Juices in Pies
Keep the juice in your pies instead of your oven.  Sprinkle two rounding tablespoons of fine breadcrumbs into your pie, one on the bottom and the other mixed with the rhubarb.

To Freeze Rhubarb
Wash and trim crisp stalks.  Line up a bunch on the cutting board and cut in even half-inch or inch pieces.  Pack in freezing containers without sugar and freeze quickly.
